Breakfast chain with KC ties eyes aggressive expansion in metro: Johnson County, more
Colorado-based breakfast chain Urban Egg is cooking up several more spots in the Kansas City area.
Partially because of the favorable economy, great neighborhoods and growth potential.
But perhaps the most important reason to founder Randy Price: He’s from here. Price graduated from Shawnee Mission South.
Urban Egg already has one metro location in Overland Park at 4921 W. 119th St., but Price is looking to open several more. He’s eyeing spots in Lenexa, south Overland Park, Lee’s Summit, Prairie Village and Liberty.
“Right now we’re kind of in a position to really start growing,” Price said. “We’re looking daily in the Kansas City area.”
Price has been in the restaurant industry since 2002, once working for Houston’s in Overland Park and on the Country Club Plaza before the chain left the area. He relocated not long after.
In 2012, he opened Urban Egg in Colorado Springs, where he currently lives. Its scratch-made menu includes cinnamon rolls with cream cheese frosting and bacon jam, strawberry cheesecake pancakes, Tuscan eggs Benedict, breakfast tacos and more.
In 2022, Price decided to open the Overland Park spot, which is currently the only location outside of Colorado.
While Price can’t disclose the exact locations for the Kansas City area spots just yet, he’s hoping to open one by the end of the year and a few more after that.
“If the opportunity presents itself that is something we could get into quicker, we would certainly entertain that, and we are actively looking for those opportunities now,” Price said.
Urban Egg is also planning spots in Denver and Texas.
Price said he took a lot of what he learned working for Houston’s and poured it into Urban Egg.
“Each plate for each guest, made from scratch, genuine, upbeat …” he said. “Sincere levels of service.”
So far, Price said, the Kansas City area has responded well to the concept. He’s gained a loyal following at his first location.
“We just had a beautiful welcoming by the folks of Overland Park and we were super happy to plant our first flag at Hawthorne Plaza,” he said. “We knew from the beginning Kansas City was going to be a great potential market for us.”
