On Sunday, July 7, 2024, connoisseurs of fine dining are cordially invited to indulge in an exclusive eco-friendly lunch experience at est, the acclaimed signature restaurant of Four Seasons Hotel Tokyo at Otemachi. This unique event, available for one day only, will showcase the culinary artistry of Guest Pastry Chef Mineko Kato from FARO, the innovative Italian eatery located in Ginza, Tokyo.
Accompanying Chef Guillaume Bracaval’s exquisite French menu, guests will savor a collaboration between two distinguished pastry chefs. Chef Kato, celebrated as Asia’s Best Pastry Chef 2024 by Asia’s 50 Best Restaurants, joins forces with est’s own Pastry Chef Michele Abbatemarco, recipient of the prestigious Best Pastry Chef Award 2024 from Gault&Millau Japan.
Beyond their dedication to sustainable haute cuisine, both chefs share a rich culinary heritage, having refined their skills under the renowned Gualtiero Marchesi at Milan’s renowned Il Marchesino, a pivotal influence in modern Italian gastronomy.
“I am thrilled to welcome Chef Kato to est. I have immense respect for her unique plant-based desserts and her skilful use of natural Japanese ingredients,” says Chef Michele. “We both honed our skills at different times in the demanding world of Italian pastry. It feels like a dream come true to now be able to collaborate and serve our desserts together in Tokyo.”
