    To make this delightful curry, you will need one medium-sized pumpkin (peeled and cubed), 400 ml coconut milk, two tablespoons red curry paste, one tablespoon soy sauce, one teaspoon sugar, salt to taste, two cloves garlic (minced), one onion (chopped), one red bell pepper (sliced), 200 gm tofu (cubed), fresh basil leaves for garnish, and oil for cooking.

    Step 1

    Preparing the pumpkin

    Start by preparing the pumpkin since it takes the longest to cook. Peel and cube the pumpkin into bite-sized pieces. In a large pan or wok, heat some oil over medium heat. Add the minced garlic and chopped onion to the pan and saute until they are soft but not browned. This should take about three minutes.

    Step 2

    Cooking with curry paste

    In the pan containing the softened onions and garlic, add a generous two tablespoons of red curry paste. Stir the mixture thoroughly for a couple of minutes. This step is crucial as it helps to unlock the aromatic qualities of the curry paste, ensuring that its full spectrum of flavors is released and ready to infuse the dish with its characteristic Thai essence.

    Step 3

    Adding pumpkin and coconut milk

    Introduce your cubed pumpkin into the pan along with 400 ml of coconut milk, one tablespoon of soy sauce, and one teaspoon of sugar. Stir everything together so that the pumpkin pieces are well-coated with all other ingredients. Bring it to a boil then reduce heat to simmer gently until pumpkin is tender but still holds its shape—about 15 minutes.

    Step 4

    Final touches

    After the pumpkin has become tender, maintaining its form, incorporate the sliced red bell pepper and cubed tofu into the curry. Adjust the flavor with salt to your preference. Allow the curry to simmer for an additional five minutes, ensuring that all components are warmed thoroughly. Care must be taken to avoid overcooking, preserving the texture and integrity of each ingredient within the curry.
