    To create this divine vegan banoffee pie, gather 250 grams of vegan digestive biscuits, 100 grams of melted vegan butter, one cup of pitted dates, half a cup of almond milk, three ripe bananas, one can of coconut cream (pre-chilled overnight), and two tablespoons of powdered sugar. These components are readily available and perfect for a fully vegan dessert.

    Step 1

    Prepare the crust

    Begin by crushing the vegan digestive biscuits into a fine crumb using either a food processor or a rolling pin. Thoroughly mix these crumbs with the melted vegan butter until well combined. Press this mixture firmly into the bottom of a pie dish to form the crust. For setting, chill in the refrigerator for at least one hour.

    Step 2

    Make toffee filling

    To create the toffee layer, puree pitted dates with almond milk until achieving a smooth mixture. This forms a rich, creamy caramel that's entirely dairy-free. Spread this homemade date caramel evenly over the biscuit base, which should be firm from chilling. Then, carefully slice two bananas and lay them over the caramel, ensuring an even distribution of banana slices atop the sweet filling.

    Step 3

    Whip coconut cream

    Open your pre-chilled can of coconut cream, carefully separating the solid part from the liquid. Transfer the solid cream to a bowl, discarding any liquid. Add in the powdered sugar and start whipping. Continue until the mixture achieves a consistency with soft peaks. This whipped coconut cream will be your pie's decadent topping. Smoothly layer it over the banana slices for a perfect finish.

    Step 4

    Final touches and chill

    Garnish your pie by arranging slices of the last banana on top. For optimal taste, refrigerate the banoffee pie for at least four hours before serving. An overnight chill is preferable, as it allows the flavors to fuse and deepen. This crucial chilling step ensures that each slice is a perfect blend of sweetness and texture, offering a delightful dessert experience.
