    Ingredients list

    Gather the following ingredients

    To make this vegan sweet potato gnocchi, you will need two large sweet potatoes (about two pounds), two to three cups of all-purpose flour (plus more for dusting), one teaspoon of salt, and a pinch of nutmeg (optional). For the sauce: two tablespoons of olive oil, one clove of garlic (minced), and your choice of fresh herbs or vegetables.

    Step 1

    Prepare the sweet potatoes

    Begin by preheating your oven to 425 degree Farhenheit (220 degrees Celsius). Thoroughly pierce the sweet potatoes with a fork and place them on a baking sheet. Bake until they are tender, which should take from 45 minutes to an hour. Once finished, let them cool slightly. Then peel the sweet potatoes and mash them until you have a smooth puree.

    Step 2

    Make the gnocchi dough

    Transfer your mashed sweet potatoes to a large mixing bowl. Add salt and nutmeg if using. Gradually add flour to the mixture, about half a cup at a time, kneading until it forms a soft but not sticky dough. You may not need all the flour or you might need slightly more; it depends on the moisture content of your sweet potatoes.

    Step 3

    Shape and cook gnocchi

    On a floured surface, divide your dough into sections and roll each into snakes about half an inch thick. Cut these into one-inch pieces. Optionally, press each piece against the back of a fork to create ridges. Boil a large pot of salted water and cook gnocchi in batches. Once they float, remove them with a slotted spoon.

    Step 4

    Prepare your sauce

    As the gnocchi are cooking, heat the olive oil in a pan over medium heat. Add the minced garlic and any additional vegetables you've decided to include. Saute until everything is fragrant but not browned, which should take roughly two minutes. Carefully place the cooked gnocchi into the pan, tossing them gently to ensure they are fully coated with the aromatic sauce you've prepared.
