    What's the story

The Swiss chard frittata is a delightful vegetarian dish that offers a blend of nutritious greens and hearty flavors. Originating from Italian cuisine, frittatas are versatile and can be enjoyed at any meal. They have become a global favorite for their simplicity and adaptability to various ingredients. With its eggless twist, this version is perfect for those seeking plant-based alternatives. Let's get cooking.

    Ingredients list

    Gather the following ingredients

To prepare this savory dish, you will need one bunch of Swiss chard (leaves and stems separated and chopped), one cup of chickpea flour, two cups of water, one teaspoon of turmeric, half a teaspoon of black salt, a quarter cup of nutritional yeast, one small onion (diced), three cloves garlic (minced), two tablespoons olive oil, and salt and pepper to taste.

    Step 1

    Prepare the batter

Begin by combining chickpea flour and water in a large bowl, whisking to avoid lumps. Mix in turmeric, black salt, nutritional yeast, and a dash of salt and pepper. Continue to whisk until the batter is smooth, ensuring an even texture for the frittata base. It's essential for the consistency of the dish that no lumps remain in the batter.

    Step 2

    Saute vegetables

Heat two tablespoons of olive oil in a nonstick skillet over a medium flame. Introduce the diced onion and minced garlic, stirring until they become translucent and emit a pleasant aroma. Next, add the Swiss chard stems, which require more cooking time than the leaves, into the skillet. Saute these ingredients together until the stems are tender yet crisp to the bite.

    Step 3

    Combine ingredients

After cooking the Swiss chard stems for five minutes until slightly tender, add the leaves to the skillet. Stir until they wilt and integrate with the stems and onions. Then, evenly pour the smooth chickpea batter over the sauteed vegetables, ensuring it covers them completely. This will form the base of your frittata as it cooks with the greens.

    Step 4

    Cook frittata

Cook on medium-low heat for about ten minutes, until the edges start to pull away from the pan. This indicates it's time to flip. Carefully invert the frittata onto a plate, then slide it back into the skillet to brown the other side, approximately eight more minutes. Once done, serve the frittata warm for your enjoyment.
