    Step 1

    Roast the vegetables

    Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Cut the zucchini, bell peppers, red onion, and carrots into bite-sized pieces. Place them on a baking sheet and drizzle with half of the olive oil. Season with salt, pepper, paprika and cumin. Toss to coat evenly and roast in the oven for about 25 minutes or until tender and slightly caramelized.
