    Hōjicha is a unique type of Japanese roasted tea derived from roasted green tea leaves. While it follows the initial steps of processing like normal bancha or sencha green tea, it undergoes an additional step of roasting in large porcelain pots over charcoal. The result is a distinct flavor profile characterized by warmer notes reminding of coffee, caramel, and chocolate.

    Roasted hōjicha tea leaves typically feature brown wedge-shaped needles, a result of firing them at high temperatures, which alters their color from green to reddish-brown. When steeped, the resulting infusion presents a clear red appearance with a distinctive nutty fragrance with little to no bitterness. Hōjicha is occasionally available in powdered form and can be used to prepare steamed milk drinks.

    Because of its roasting process, hōjicha possesses significantly lower caffeine levels compared to coffee or other green teas like matcha. Furthermore, hōjicha contains L-theanine, an amino acid known to reduce blood pressure and levels of the stress hormone cortisol.

First and foremost, hōjicha should be brewed in a suitable teapot equipped with an attached mesh. This prevents tea leaves from escaping into the teacup while allowing them to move freely within the pot. This ensures optimal flavor extraction and consistency in strength throughout the infusion process.

    Apart from the traditional brewing and steeping method, hōjicha can be enjoyed cold latte style combined with milk for a creamy beverage, offering a refreshing twist on this classic drink. Using loose-leaf hōjicha, grinding the leaves in a spice grinder can produce the desired powder consistency. There's also a powdered form of hōjicha available, which allows for the preparation of a hot milk tea.
