A downtown Louisville deli that has been closed since the COVID-19 pandemic is back open and providing hands-on experience for culinary students.The Underground Café is now located in the basement of Jefferson County Technical College's health sciences hall.The deli is being run by culinary students who also create the menu, which changes every two weeks.Students are also tasked with ordering ingredients, prepping and cooking and gaining restaurant sales experience.According to the culinary program's coordinator, the opportunity is not only giving students experience but can be used for class credit.The Underground Café is open Monday through Thursday from 10 a.m. to 2 p.m.
