    Gather the following ingredients

    To prepare this delectable tofu stir-fry, you will need 14 ounces of firm tofu, two tablespoons of vegetable oil, one red bell pepper sliced, one green bell pepper sliced, two medium carrots julienned, three tablespoons of soy sauce, one tablespoon of freshly grated ginger, two garlic cloves minced, one teaspoon of cornstarch, and a pinch of salt and pepper to taste.

    Step 1

    Preparing the tofu

    Press the tofu first to remove excess moisture, ensuring a crispier texture when cooked. Cut the tofu into bite-sized pieces. In a bowl, whisk soy sauce, grated ginger, minced garlic, cornstarch, and a bit of water to create your marinade. Coat the tofu cubes with half of this mixture and let them sit for 15 minutes to soak up the flavors.

    Step 2

    Stir-frying the vegetables

    Heat a tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced red and green bell peppers, along with the julienned carrots, to the hot oil. Stir-fry the vegetables for about four minutes until they become tender-crisp. After they're cooked, remove the vegetables from the pan and set them aside on a plate for later use.

    Step 3

    Cooking the tofu

    If needed, add another tablespoon of oil to the pan. Arrange the marinated tofu cubes in a single layer for even cooking. Fry them undisturbed for about two minutes, or until the bottom turns a golden brown. Then, flip each cube carefully and cook for an additional two minutes to brown all sides thoroughly, achieving a uniformly crisp texture.

    Step 4

    Bringing it all together

    Reintroduce the cooked vegetables to the pan with the tofu. Pour the rest of the marinade over them and stir gently to ensure all components are evenly coated with the flavorful sauce. Continue to cook for one more minute, allowing the sauce to heat through and thicken slightly. Finally, taste and season with extra salt and pepper as desired.
