Strawberry Shortcake

Ingredients:
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cut into small pieces
1/2 cup milk
1 egg
1 teaspoon vanilla extract
2 cups sliced fresh strawberries
2 tablespoons sugar
1 cup heavy whipping cream

Method of Preparation:
1.Preheat the oven to 375°F (190°C) and grease an 8-inch square baking pan.
2.In a large bowl, whisk together flour, sugar, baking powder, and salt.
3.Using a pastry cutter or your fingers, cut the butter into the flour mixture until the mixture resembles coarse crumbs.
4.In another bowl, whisk together milk, egg, and vanilla extract. Pour the mixture over the flour mixture and stir until just combined.
5.Pour the batter into the prepared baking pan and bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
6.While the cake is baking, mix the sliced strawberries and 2 tablespoons of sugar in a bowl. Let it sit for at least 10 minutes to let the sugar dissolve.
7.In a separate bowl, beat the heavy whipping cream until stiff peaks form.
8.Once the cake is done, let it cool for 10 minutes before slicing it into squares.
9.To assemble, place a square of cake on a plate, top it with a spoonful of the strawberry mixture and a dollop of whipped cream. Repeat the layering until all the cake squares are used up.
10.Serve immediately and enjoy!
You can also add a drizzle of honey or caramel sauce on top for some extra sweetness.
