Which fullbody program is better?
The Viking's seem to have a lot of sets and reps... would that be too much volume?

They're both novice programs, and basically everything will work for novices, so it doesn't really matter.
Pick one and follow it.
Fierce 5 is probably more fool proof, and for a novice that's a good thing.
Fierce 5 really focuses on taking advantage of Novice level of recovery from fatigue, and adaptations. The exercise selection is basically: exercises that induce the highest stimulus, but also the highest fatigue. So it's basically perfect for novices. Of course, a trainee can only induce so much fatigue before recovery becomes a problem, and that's when you deload or advance to a (worse) slower progression / intermediate program, maybe even focusing on more exercises that induce less fatigue if your goal is physique or bodybuilding.
