    Economics and genetics. Turkeys are probably bred to produce the most meat in the least amount of time with the lowest cost of inputs. The growers probably make more money that way then trying to mass produce the eggs.

    Chickens bred for laying eggs can start doing that when they are 28 days old. My wife had chickens and they layed an egg a day every day for at least 2 years. That's at least 700-800 eggs per chicken.

    Tyson foods was considering putting a chicken processing facility in my county. $150,000,000 plant. I generally make 1/10 of 1% of the project cost in renting to the people doing the work. I went to one of their meetings for prospective chicken growers. They wanted the farmers to build 8 chicken barns. Every week Tyson would bring enough chicks to stock a barn, and enough food for 7 weeks. After the 7th week they'd take the chickens from the first barn and give the farmer one week to clean it out before restocking it. They were even giving out loans to build the barns.

    Problem is water. The water distribution system in my county is for rural residential use. The water consumption in the county would probably quadruple with all the farms (Tyson needed 70 farms in a 60 minute radius). The water distribution system was not up to the quantity of water necessary. My solution would be to build ponds at each farm to provide supplemental (not primary) water.

    I would have had 50-75 construction workers in my rentals during the building phase, and anywhere from 10-40 tradies doing maintenance/repairs year round from then on. That was probably my saddest day in the last 10 years when I found out they were not coming.
