Meat substitutes derived from fungi are not a brand-new frontier (“Jeff Bezos, Bill Gates can take their fungus meat and — fuhgettaboutit,” Web, July 8). For example, Quorn, a delicious and popular vegan chicken, contains mycoprotein, which is derived from the Fusarium venenatum fungus. A German company is using the humble mushroom to produce quality analogs, and in Colorado, Meati Foods is making steak and chicken breasts from filamentous fungi.

Forward-thinking innovators like Jeff Bezos, Bill Gates and Al Gore invested millions in this technique to help fight climate change. These are investments backed by science. Animal agriculture produces carbon dioxide, methane and nitrous oxide, which are all potent greenhouse gases that drive climate change.

Fungi-based meats are produced with a much lighter carbon footprint. This is a good thing for the planet.

Experts say that we can slow or even reverse climate change. We can come together to leave a healthy planet for our children; that is nothing to “fuhgettabout.”
