Benchpress 3x10 @ 75lbs vs 4x12 @ 50lbs
When comparing between these 2 sets, which would be better for hypertrophy, building muscle mass?

Depends on the RPE - not the rep range.
One day this will be common knowledge... I hope.
Number of sets done to a high enough RPE is what produces the stimulus
