Most of those seem like fouls. Is being a defender basically just fouling and hoping you get away with it?

if you are able to put your foot in and get the ball off the attacker then it's not a foul
what makes a great defender is timing. The best defenders of all time were able to read attackers really well and always put their foot in the right time.

If you get ball it’s a clean tackle. If you go for the man it’s a foul.
