I asked my gf to watch my dog for me for like a couple of days. She’s not really a dog person but she agreed to do it. Now everytime she’s around, my dog seems terrified. I didn’t think much of it at first until today. I raised my hand and my doggo flinched. That got me thinking that maybe she hit him or something. My dog likes everyone so it’s pretty hard to believe he would suddenly stopped liking her.

She may have been mean to him BUT there is also the possibility that your dog is afraid you will give him/her away or abandon so dog associates your girl with abandonment. I doubt it though.
My dog Sara doesn't like GF's much because she's afraid it takes attention off her, but that doesn't happen. GF's have been jelly of my dog.

Sorry. Brah I wouldn’t trade my dog for the world. Seems like she must’ve hit him.
When my dog was a pup he used to bite/snap at my hand for attention or to refute.
I hit him on the snout a few times and he would flinch for a little while after when I raised my hand to scratch his head or pet his head. But overtime he got over it as I mainly would be petting him. He did stop the biting and snapping tho so he learned.

If you're raising your hand and the dog flinches and this behavior was not conducted before your girlfriend took care of your dog then there may be a possibility here that she abused your dog.
Dogs are smart brahs so having behavioral traits like this especially without having it before and knowing your dog is extremely terrified only when your girlfriend approaches it should give you enough indication that there is massive issue

I would probably go full interrogation mode and ask her out of the blue if she had to discipline your dog and have follow ups asking the same question in different ways. Have to be really observant to catch some people. But the patterns are always the same. Half truths, answering a slightly different question then the one you asked along with subtle body language changes.
But if it’s new behavior after she watched him then it’s pretty obvious..
