In this recipe, all you need to do is boil and dice potatoes to fry them. Slice and fry the eggplant in the same way. Saute the spices such as cumin seeds, cinnamon and onions along with ginger-garlic, chilli powder and coriander. Simply add the fried eggplant and potatoes to this mix, top with lemon juice and coriander, and serve hot!
