A typical Indian meal has to be tongue-numbing spicy along with a side dish that is also high on heat. Achaar (or pickle) makes Indian foods what they are - flavourful and full or spiciness. Pickles are a fermented side dish that goes with all Indian meals, mostly parathas, pulao, chole bhature and so on. If the achaar is not spicy enough, it doesn't make it to our top list. To ensure we always get a spicy pickle to round off our meal, the best thing to do is pick a 'mirch ka achaar'. There are scores of pickle recipes made with green chillies or red chillies that are the perfect desi side dish you can ask for.
Any bland dish can be magically transformed into a decadent with mirch ka achaar. Forgot to add green chillies in your paratha? Red chilli powder not enough in your curry?
