A Muffin Break store manager has admitted retrieving out-of-date ham from a bin, but claims she just did it to 'take a picture'.
The manager at the cafe's store at Westfield Chermside in Brisbane's north has been accused of texting staff with threats saying they will lose their job if they keep throwing away expired meat.
She did not deny taking the out-of-date ham out of the bin when confronted, but bizarrely claimed she just wanted to photograph the meat.

'Because I need to take a picture. That's the reason,' the manager said when asked why she took the meat out of a bin by 9News.
But the manager claimed she never served expired meat to customers, replying 'of course not' when asked if the ham she pulled out of the bin was sold.
Staff at the store have accused her of telling them they will lose their jobs if they keep throwing away expired ham, sparking an investigation by Muffin Break.
'The price of a bag of shaved ham are $10.25, times 2 are $20.25... was been ready to wasted,' read a text message sent by the manager provided to The Courier-Mail.
'There are lots of stuff has been wasted like this way, however this shop really can't afford this waste anymore.'
The manager texted staff saying she had plenty of job applicants and could replace them if she wanted.

'I have received a few good resumes.. if new girls are doing better than you, they are going to take over your shifts,' the messages read.
A teenage staff member said she and her colleagues felt pressured into following the orders despite food safety regulations.
Muffin Break, whose motto is 'Always Fresh,' told Daily Mail Australia a full investigation is underway with operational staff onsite on Tuesday and Wednesday.
'Muffin Break is committed to the highest standards of food safety and workplace health and safety, and we do not condone these alleged practices,' the spokesman said.
'We are still investigating the matter, however our initial findings indicate that the ham was not used in any products for sale.
'We will continue our investigations and take appropriate actions based on the final findings.'
