The chocolatey cocktail gets its creamy texture from unsweetened coconut milk

Who doesn’t enjoy a nice chocolatey cocktail on a special occasion? I definitely do! Restaurant drinks like this tend to be high in calories and sugar, so I love to make lightened-up versions at home. The dark cocoa powder in these martinis brings rich chocolate flavor, and the unsweetened coconut milk makes ‘em perfectly creamy. Mix up a couple on Oscars night—no matter who takes home a statue, you win.
Chocolate Coconut Martinis
Serves 2
2 Tbsp. unsweetened dark cocoa powder
3 oz. vodka
2 oz. unsweetened vanilla coconut milk beverage
3 packets natural no-calorie sweetener
⅛ tsp. coconut extract
Optional garnishes: shredded coconut, shaved dark chocolate

1. Combine cocoa powder with 2 oz. hot water, and stir to dissolve.
2. Add 2 oz. cold water and remaining ingredients. Stir until smooth.
3. Transfer to a shaker filled with ice. Shake and strain.
