fabioFabio Trabocchi, renowned chef and restaurateur has been appointed by JW Marriott Venice Resort & Spa as the new head of its Dopolavoro restaurant.
The premium fine-dining outlet, Fiola at Dopolavoro Venezia has been refreshed nad renamed and draws inspiration from Trabocchi’s acclaimed Michelin-starred US restaurant, Fiola DC.
It provides the diners with a sophisticated and luxurious ambiance along with architectural details which will take one back to the 1920s.
Trabocchi mentioned that the debut of Fiola at Dopolavoro Venezia is a significant milestone as it marks Fiola’s expansion internationally also due to his personal homecoming as he returns to Italy after so many years abroad.
He was looking forward another exciting chapter for Fiola and wanted the guests to have an amazing experience through their signature dishes.
Their local menu was inspired by the city’s romantic atmosphere and was thrilled to open the outdoors to their newest location.
Guests can anticipate dishes that offer a perfect combination of seasonal ingredients locally sourced from Venice’s historic Rialto Market and the Adriatic Sea. It also has the vegetables and exclusive olive oil from the private island’s own vegetable garden and olive grove.

The vibrant menu is thoughtfully curated by Trabocchi and the cuisines are deeply rooted in traditional flavours from Italy and Adriatic.
