MECHANICALLY SIMPLE, robustly built and seldom used, electric knives are that rarest of things when it comes to appliances: seemingly immortal. My mother’s ancient GE electric carving knife, which she got as an engagement gift in 1967, is still deployed a few times each year, making quick work of a turkey, brisket or the occasional sponge cake.
