A man is recovering in hospital after a horrifying mishap while cooking a barbecue lunch for Prince Harry and Meghan Markle during their visit to Dubbo.

A butcher told Brisbane radio station Hit 105 breakfast hosts Stav, Abby and Matt that his friend Jamie was cooking up some scotch fillets and rump steak sausages for the royal couple in Victoria Park when disaster struck.

'Not only did it rain on him but then the gas cylinder exploded on him while the royals were in the area,' Jason told the radio station.

Jason said Jamie was fine and on the mend in hospital.

'He didn't have much hair to start with but it's less now,' he told listeners. 

'He's got no eyebrows at the moment and he's got burns bandages plastered all over his face but has they've assured him it will only look like extreme sunburn.'

Dubbo fire station, along with Fire and Rescue NSW told Daily Mail Australia they were unaware of the incident and weren't called out.

More than 10,000 locals braved the rain in the park, hoping to get a glimpse of Prince Harry and his wife of five months during their visit to the town in country New South Wales.

Jason said Prince Harry and Meghan continued their meet and greet with the locals following the mishap and that their security entourage were not impressed.

'They were all 100 metres away at the time but hey weren't happy at all,' he told the station. 

Jason, who supplied the meat to his mate for the barbecue, said he was disappointed when he found out that the Royals don’t eat when they’re out in public and had brought their own food with them.

But he assured listeners the feast didn't go to waste and was enjoyed by other people accompanying the couple.

The Duke and Duchess of Sussex are in Melbourne on Thursday.
