The hotel had earlier achieved its target of reducing food wastage by implementing a well-structured programme and is currently heading towards zero food waste to the landfill.
The chefs in the hotel would be able to track food waste more accurately with Winnow’s help.
The weight is automatically recorded by the scale which the kitchen staff further identify the item with the tablet attached to the scale.
Training chefs and the stewarding department not to mix the food waste with general waste at the cooking stations were among other measures adopted by the hotel.
The waste at source along with the composting food waste is segregated by the hotel team. This helps in the reduction of the amount sent to the landfills.
Zero-food goal is achieved with the help of a food waste recycling material.
