STUARTS DRAFT - White Hill Catering and BBQ has now opened a new lunch and dinner dine-in and take-out spot in the former DoLittle's Diner location in Stuarts Draft.

For Josh Biser and Mike Burnett, partners in the new venture, the spot is about comfort food done right, but quickly accessible. 

It's a fast casual cafeteria-style dining experience.

What they are calling White Hill Dine-In is open Tuesdays through Fridays. The dining room is open from 11 a.m. to 2 p.m. and 4 p.m. to 7 p.m., with take-out available 11 a.m. to 7 p.m.

There's no servers, you walk in, pick out your food, you're served on a tray and you can sit down in the dining room, or take it out.

"You can get in and out of here in 10 minutes, if you want," Biser said. 

When you come in to dine, or take-out, you can get an entree with two sides for $8.99. Entrees may include baked chicken quarters, barbecue chicken quarters, sliced pork tenderloin, meatloaf, chopped sirloin, pork barbecue and more. Sides include potato salad, cole slaw, broccoli salad, baked mac and cheese, mashed potatoes and more. 

Biser has owned the catering business for more than a decade. It's located in the building just adjacent to the new restaurant on Stuarts Draft Highway. 

Opening the new spot had to do with timing. Biser and Burnett have been talking about branching out for the past few years, but once DoLittle's Diner closed, they jumped on it. 

The two have been working in restaurants since they were teenagers. Biser had a long stint at Gavid's Steakhouse in Waynesboro and various other cooking gigs in his younger years. Then he opened his own catering business.

"I wanted to do it for myself," he said. 

Biser uses a lot of old family recipes. He was brought up by his grandmother, who loved to cook. So, he has adapted many of her recipes. 

"Most of these recipes were passed down," he said. "

For Burnett, he has been in the restaurant industry — in one form or another — since he was 15. But, he's been doing more management and sales most recently. 

The two wanted to offer more food options for the residents of Stuarts Draft. And since many are familiar with Biser and White Hill Catering, they thought it'd be a good fit.

Biser also wanted to have more of his weekends free. Now, being open during the week, he said he can expand on his food during the week and relax more on the weekends. But, he will still be offering catering for parties of 300 people or less. 

Biser is originally from Stuarts Draft and Burnett has called the Shenandoah Valley his home for nearly two decades. The are looking forward to bringing home cooking to their neighbors, they said. 

"The last few years we have been talking about doing something together," Burnett said. "This opportunity came about, it all worked out."

DoLittle's closed in January after two years of business. Biser and Burnett are renting the space and did minor renovations, since DoLittle's already had most of the equipment put in. The place look fresh, clean and ready for customers. 

Both catering and restaurant offer the same type of comfort food. And this isn't the first time Biser has offered food to-go. Previously, he would have take-out supper every Wednesday, which was a huge success. 

"We would sell 80 to 90 meals every Wednesday and we would sell out," Biser said. "There's a need for comfort food."

They haven't done much advertising since they've opened and they wanted to work out any kinks before going completely public. But, people are slowly finding out. 

"We've had lots and lots of repeat customers," Biser said. "It's been good."
