This recipe uses muffin tins to produce individual-serving meatloaves that cook up a lot faster than a standard loaf — making them easier to pull off on a weeknight.

The meatloaves can be mixed in about 5 minutes and take only 20 minutes to bake. A little store-bought barbecue sauce makes for a quick and flavorful topping.
