Scully, the debut restaurant of Ramael Scully, opens at St James’s Market, SW1.

Behind the scenes

After 13 years in a supporting role, first at Ottolenghi, later as head chef at NOPI, Ramael Scully gets his spin-off show. Scully, born to a Chinese-Balinese-Irish-Indian family in Malaysia, trained in Sydney and has worked in Moscow, the Middle East and Europe. The project is backed by Ottolenghi himself, with wines from natural wine specialists, Newcomer Wines.

The concept

Visually, Scully the restaurant reveals little about Scully the chef. Off the plate, he’s gone for a spare aesthetic – a beautiful but blank canvas of slate grey walls, wooden tables, marble counters and open kitchen...
