French President Emmanuel Macron said that the incident appeared to be a terrorist attack.
Two died at the hostage-taking at the Trebes supermarket and one more was killed with a bullet in the head in the nearby historic town of Carcassone.
Three people have been confirmed dead. The attacker has been killed as well.
The hostage-taker is now alone in the supermarket with a policeman and all hostages have been freed.
According to local news channel BFM TV, the hostage taker has asked for the release of the November 2015 Paris attacker Salah Abdeslam.
Abdeslam is the prime surviving suspect in the Paris attacks that killed 130 people in 2015.
Most of the employees and customers of the Super U managed to flee, a source said, according to AFP. The police officer was in contact with the gunman at the supermarket in the town of Trebes, near Carcassonne, the source added.
