Flavour is back. When it comes to cakes, anyway, extravagantly decorated but bland and dull-tasting versions are out, and natural cakes that taste good to the last crumb are in. It is good news for those of us who have had it with ready-rolled fondant icing blanketed over lacklustre sponge or stale cupcakes piled high with bland buttercream. Both – along with the flavourless chocolate gateaux – have become all too common at the post-marriage-vows bash, as fewer and fewer couples opt for the traditional wedding cake.
