Flavour is back. When it comes to cakes, anyway, extravagantly decorated but bland and dull-tasting versions are out, and natural cakes that taste good to the last crumb are in. And if you want proof, look no further than Meghan Markle and Prince Harry’s choice of Claire Ptak to make their wedding cake.

It is good news for those of us who have had it with ready-rolled fondant icing blanketed over lacklustre sponge or stale cupcakes piled high with bland buttercream. Both – along with the flavourless chocolate gateaux – have become all too common at the post-marriage-vows bash, as fewer and fewer couples opt for the traditional wedding cake.
