Chef Dhondy's initial professional cooking days were spent in the pastry kitchen. Her move from the pastry to the hot kitchen came after a senior chef insisted that she try what cooking cuisine would be like. "I fought with my chef that I don't want to work in the hot and sweaty banquet kitchen". The Chef's response changed her mind. "Anahita, if you don't step out of the bakery you'll never know how you'll enjoy cuisine, you'll never know how good you are at it, you'll never be an executive chef". Those words always come back to me, and I thank him because I'm so happy to discover my love for cuisine and most importantly regional food.
