We’re not the first to note that breakfast is an important meal. But with so little time between waking up and heading to work, preparing an actual meal doesn’t always seem possible.

Mornings don’t have to be so hectic, though. We pulled together eight breakfast ideas you can make once and freeze the remainder for those days when time is at a premium. For safety, the USDA recommends to keep food frozen for no more than three to four months.

Smoothies

Because most smoothie recipes require frozen fruit or ice anyway, take sandwich-sized bags and fill them with all the ingredients. Pop them in the freezer and when it’s time for breakfast, snag a ready-to-go baggie and blend for the fastest meal you’ve ever had.

Frittata

A frittata can be time consuming, but if you make it in advance you’ll be ready to heat-and-eat all week long. Slice the frittata into servings after it’s cooled, wrap those wedges tightly in plastic wrap, and place them in a freezer-safe container. Come morning, unwrap the slices and pop them in the microwave until warm. Breakfast is served.

Muffin-Tin Eggs

It takes just 10 minutes of prep to get these mini frittatas in the oven. Enjoy them all week long knowing that the suggested serving size (2) clocks in at only 168 calories.

Muffins

These muffins are a Cooking Light Diet team favorite, and for good reason. One batch makes 12 easily freezable muffins. Defrost the berry-filled bites overnight, or reheat via microwave. They’re still delicious even after freezing.

Burritos

Breakfast burritos are the perfect grab-and-go meal. After your prepped burritos have cooled, wrap them each in plastic wrap and place inside a freezer-friendly container. When you’re ready to nosh, wrap them in a slightly damp paper towel and microwave for three to four minutes.

Strata
