(Feb. 1, 2018) I recently watched an informative and satisfying documentary about one of the least well-known, but most influential, American chefs, Jeremiah Tower, titled ”The Last Magnificent.” It streams on Netflix.
Tower’s career in food and hospitality got off the ground at Chez Panisse in Berkeley, Calif. where he became Alice Waters’ partner in the seminal American dining spot, and then walked away from it.
If there is truth to the documentary it was Towers who put the imprimatur on Chez Panisse when he produced dishes using local and American ingredients, and then gave credit to their origins on the restaurant’s menu. Apparently, when Waters wrote her first cookbook, she neglected to mention Towers’ contribution to the business. Not a small slight.
