Here is a dinner you can make as spicy or mild as you like. Thai chilies are very spicy. Use just a few or substitute with a much milder pepper. This is your chance to make a very flavorful Thai dish at home. Enjoy!
Ingredients
- 2 14-ounce packages flat rice noodles
- 1/4 cup vegetable oil
- 12 garlic cloves, chopped
- 1/4 cup Thai chilies, chopped
- 2 pounds boneless chicken, sliced thin
- 1/4 cup fish sauce
- ½ cup soy sauce
- 1 tablespoon sugar
- 4 large plum tomatoes, each cut into 6 wedges
- 2 green bell peppers, cut into strips
- 1/4 cup fresh Thai basil leaves, chopped
Directions
Cook noodles in large pot of boiling salted water until tender about 3 minutes. Check package directions. Drain.
In a wok or large fry pan, heat oil over medium-high heat. Add garlic and Thai chiles; sauté 30 seconds.
Add chicken, soy sauce, fish sauce, and sugar. Cook until the chicken is cooked through.
Add noodles, tomatoes, and basil toss to coat. Transfer to large platter, sprinkle with more of the basil leaves, and serve.
