Meat Market Update | Roasts push cutout higher

Move over prime rib, it's time to breakout the crockpot. Roasts are the main player in the jump in this week's cutout, as we start the new year and consumers switch to roast items for home cooking from Round and Chuck products, which starts to push the cutout higher. These two primals together represent over 50 percent of the carcass so they have a very big impact on the cutout price and they were both $4-5 higher this week which definitely shows improving demand.
