Triranga rice cakes
Ingredients
Idli batter: 4 cups
Palak puree: 1 cup
Carrot puree: 1 cup
Ginger paste: 2 tbsp
Green chilli paste: 2 tbsp
Cooking oil: 2 tsp
For garnishing
Grated coconut: 4 tbsp
Coriander leaves chopped: 2 tbsp
For the seasoning
Mustard seeds: 1 tsp
Curry leaves a few
Oil: 1 tsp
Method
Pour the batter into a big bowl, add salt and divide into three parts.
Mix carrot puree, ginger paste, chilli paste and a pinch of salt with one portion of the batter.
For the white batter keep aside one portion.
For the green batter mix the remaining third portion with the palak puree and the remaining ginger paste and green chilli paste and a pinch of salt.
Fill water in a large vessel and bring to boil. Grease a flat steel plate and pour the prepared green batter onto a greased plate. Place in the vessel, cover and steam for five minutes. When it is done, pour the white batter on to it and steam for five minutes. Last, add the orange batter and steam for five minutes. Remove from the vessel and allow it to cool.
For the seasoning, heat the oil in a saucepan and temper with mustard seeds and chopped curry leaves. Pour it on the idlis. Garnish with grated coconut and chopped coriander. Cut it into desired shapes. Serve with green chutney and sweet chutney.

Green chutney: 4 tablespoons

Method
Mix carrot, mayonnaise and salt for the orange filling.
Next, mix the cottage cheese with green chutney and salt.
Take a slice of bread and spread the green layer evenly. Now, cover it with another slice of bread. Spread the orange filling on the third slice and place it face down on the bread. Cut each sandwich in half and serve.

Tri-fruit fills
Ingredients
Whipped cream: 2 cups
Sponge cake: 3 slices
Kiwi, chopped: 2 cup
Oranges: 10 segments
Method
Take a transparent glass. Use it to cut two round slices of the cake. Fill the glass with two tablespoons of kiwi. Then place a slice of cake over it. Now, add two tablespoons of whipped cream. Place the other slice of cake on it and place five orange segments on it. Your tri-fruit fill is ready. Chill before serving.
