You’ve Been Cooking Bacon Wrong This Whole Time

Grill your meat with a brick on top to unleash some serious flavor

Few foods quicken a guy's pulse quite like bacon. But if you've been cooking it on the stove top all this time, you haven't been eating the real deal. Instead, throw a few thick-cut slices on the grill and cover them with a foil-wrapped brick (or two), then season with rosemary and black pepper to bring out that true smoky flavor. Pair it with eggs, or put it on your burger—either way, you'll never cook bacon the same way again.

What You Need:

  • 1 8-oz package thick-cut bacon
  • High-quality extra-virgin olive oil
  • 2 Tbsp finely chopped rosemary
  • Freshly ground black pepper

How to Do It:

  1. Preheat your grill to high. Once the grill is hot, place the strips perpendicular to the grill grates and cover the strips with a foil-wrapped brick to prevent the bacon from curling. Grill the bacon until crispy, about 2 to 4 minutes on each side.
  2. Transfer bacon to baking sheet and blot grease with a paper towel; dress with a light brushing of olive oil, the chopped rosemary, and ground pepper. Serves 5, as a side dish.
