On the occasion of Earth Day on 22 April, Masque, a fine-dine restaurant in Mumbai, is collaborating with New York-based, (mostly) vegan chef Scott Winegard to curate a vegetarian and vegan 10-course meal. Masque believes in using locally sourced and seasonal foods and Winegard is known for preparations that creatively use plants, staying true to the original taste.
Winegard is a celebrated chef known for his work at the Nasturtium and Pure Food & Wine restaurants in New York. At present, he is working with celebrity chef Matthew Kenney and his empire of restaurants, including Plant Food and Wine in Venice, California.
“Winegard’s philosophy of using plants in a unique way and ours of providing nature on a plate was a perfect fit,” says Aditi Dugar, co-owner of Masque. “Look out for fun ingredients like white watermelon or chilli flowers.”
To add to what’s on the plate, Masque is designing interiors to resemble a plant lab, where the herbs and microgreens being used in the menu will be on display in test tubes for diners to touch, pluck and experience what they’re eating in its original form. “We have been growing herbs in lab equipment for the last month or so. We’re creating a green wall and diners will feel like they are within a greenhouse,” says Dugar. Masque has collaborated with Conscious Food, an organic food brand, for this. An organic beverages menu, crafted by Belvedere, will accompany the 10-course meal.
The Earth Day dinner is on 22 April, followed by a lunch and dinner on 23 April. Price, Rs7,000, plus taxes.
